These subtly sweet, crisp cookies can be found in countries around the globe, but they have been made in Italy as far back as the fourteenth century. The name Biscotti can be translated as "twice cooked", which indeed describes how these tasty cookies are made. By baking them twice, they lose excess moisture, ensuring a crisp, dry cookie. In fact, it is said that Christopher Columbus carried biscotti on his voyages because they were so sturdy, and their dryness prevented the problem of spoilage.
